What is Harissa?
Harissa is a remarkably versatile Tunisian hot sauce, also found in other North African countries such as Algeria and Morocco. The word means ‘mash’ in Arabic. It is also used in Israeli cookery.
The popularity of harissa has spread to parts of Europe, particularly France and Germany, although it’s still relatively new to the UK. Harissa is renowned for its rich, complex flavour rather than for extreme heat. It is typically used in couscous dishes, but also complements meat, fish, eggs, vegetables and grains, and can form the basis of a dip. There are recipes and suggestions throughout this website.
