What is Harissa?
Harissa is a Tunisian hot sauce, also found in other North African countries such as Algeria and Morocco and used in Israeli cookery. The word means ‘mash’ in Arabic. The popularity of harissa has spread to parts of Europe, particularly France and Germany, although it’s still relatively new to the UK. Harissa is renowned for its rich, complex flavour rather than for extreme heat. It is typically used in couscous dishes, but also complements meat, fish, eggs, vegetables and grains, and can form the basis of a dip. There are recipes and suggestions throughout this website.
Why Harry Brand?
There are several brands of harissa available in the UK, but in our opinion this one is truly exceptional. It is made by a small company in France using a secret family recipe that has been passed down through generations of Tunisian descent. Unlike most harissa sauces, this recipe uses just four ingredients carefully sourced and of the highest quality, with no artificial additives. You will be able to taste the difference in Harry Brand’s remarkably adaptable harissa – it’s full of potential.
Jar or Squeezy?
The ingredients and quantities are the same in both the Harry Brand harissa jar and squeezy, but the latter is a smoother blend, which some people find slightly hotter. The harissa in the jar is best for spooning as an ingredient or table condiment. The squeezy is best for barbecues, pizzas, Bloody Marys and for mixing with mayonnaise – shake before use to get the best results.
What does it go with?
Almost everything, from roast meats (especially lamb and chicken), to oily fish, roast vegetables and pasta or grains. See specific recipes on this site for variations on quantity.
